I love the colors of fall. The spectacular bursts of color paint our hills and valleys into unbelievable works of art. They take your breath away. What joy to see.
Nature’s fall harvest dazzle our eyes with red apples, orange pumpkins, yellow squash, green and red peppers, yellow onions, brown and orange potatoes, green and gold pears, yellow corn, green cabbage, purple beets, red tomatoes and green striped watermelons, to name a few – all grown in our own New York State. Our farmers work hard for the fall harvest.
Take a ride in the country to enjoy the fall colors and stop at one of the outdoor stands. Pick up some super fresh produce to enjoy now or freeze or can for this upcoming winter.
Bring the outside colors inside and decorate your homes with fall colors by filling vases with colorful leaves, mums and sunflowers. Display pumpkins and gourds in baskets and fill a cornucopia with fruits and use it as your table centerpiece. Wow appeal, and a warm and cozy home atmosphere will make it a nice place to be or visit.
What can better on a brisk fall day than a bowl of colorful tomato soup, bursting with flavor with in every spoonful. So rich and creamy, its red velvety smoothness will warm both your tummy and spirit. Great for lunch or dinner.
Creamy Tomato Soup
3 tbsp. Finely chopped onion
1 garlic clove, minced
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
2-1/2 c. half and half
2 c. tomato juice
1/4 tsp. Worcestshire sauce
In a two-quart saucepan, sauté onion and garlic in butter until they are tender. Stir in flour, salt and pepper and stir until bubbly. Gradually add half and half and tomato juice, then worcestshire sauce. Bring to a boil, using low heat so it does not curdle and stir constantly until it thickens and gets creamy. Serve hot.
